Ok.... remember that buttermilk chicken craving I had a few days ago? Well, that wasn`t it, there was a biscuit craving that went along with it. I must confess I only made biscuits twice in my life. the first time was good but I think this one is better and easier. You might be thinking hmmm, square biscuits, am I making a statement? innovating perhaps? no (I wish!) I just don`t have a round cutter... I know I know and I call my self a baker--- round cutters on my number 1 list to buy this week. Promise!
So here`s the recipe .... if you don`t find this ridiculously easy you can call me a liar ;) xoxo
Ingredients:
1 cup buttermilk
1 stick of butter
2 cups of all purpose flour and a bit more for counter
1 tbsp sugar
1/2 tsp baking soda
2 tsps baking powder
1 tsp salt
Instructions:
Heat oven to 450 degrees f.
Line sheet pan or spray with cooking spray.
Measurure 1 cup of buttermilk and place the cup in the freezer for 10 minutes while prepping other ingredients.
Melt the butter in the microwave for about 30 seconds set aside to cool.
Whisk flour, baking powder, baking soda, sugar and salt in a bowl.
After buttermilk has been chillded in the freezer for 10 minutes combine it with the melted butter. Stir with a fork until butter forms small clumps.
Add buttermilk mixture to dry ingredients and stir with rubber spatula until all flour is incorporated and batter pulls away from the side of the bowl. Dough should be stiff and not very wet. If doug is wet, add more flour one tablespoon at a time. Stir again until combined.
Flour your work surface, and place your biscuit dough on it and start kneading 5-6 times. Open your dough (I used a rolling pin) and start cutting your biscuits. Place biscuits on the prepared pans. Knead scraps a few times til they hold together, open the dough and cut more biscuits. Place in the oven until tops are golden brown and crisp, about 18 minutes.
Melt 1 tbsp of butter if necessary and brush tops of biscuits.
