The Moistest Apple Cinnamon Cake

I'm back!!! Yes, back from my 17 wonderful days in Boston and New York where I indulged myself with great food, shopping, culture, " me-time" and everything else that I'm entitled to. But, everything that is good must come to an end, and yours truly is back on the daily grind..... and indeed what a week!
My daughter surprised me a couple of nights ago. There was a bake sale in school and of course she told me last minute. This was around 8 at night and i wasn't at all in no mood to leave the house and go to the supermarket. I saw three apples in my fruit basket and without hesitation I thought apple cake it is. This cake is super moist and super easy to make, with lots of flavor. I hope you like it, it's one of my go-to recipes. You can change the apples to bananas or even carrots, yes... carrots!!! I topped it with a quick chocolate ganache and just to be extra naughty I sprinkled finely chopped white chocolate on top.
Ingredients
4 eggs
1 cup vegetable oil
1 tsp vanilla extract
3 cups shredded apples
2 cups flour
2 cups sugar
1 tsp salt
2 tsp baking powder
2 tsp cinnamon powder
1 cup chopped chocolate
1 cup heavy cream
instructions
Preheat oven to 176 degrees celcius or 325 degrees fahrenheit.
1. In your standard mixer beat the eggs with the oil and vanilla.
2. In a seperate bowl, whisk in your flour, sugar, salt, baking powder and cinnamon.
3. Pour the dry ingredients to the egg mixture and mix until well blended.
4. With a spatula fold in the shredded apples.
5. Pour the mixture in a lined bundt cake pan.
6. Bake for 50-55 minutes or until toothpick comes out clean when inserted.
7. Once cake is cool, you can start making your ganache. Place the chocolate to melt in the microwave for about 60 seconds. Mix the heavy cream on melted chocolate and blend well. Pour on top of cool cake, sprinkle finely chopped white chocolate on top (only if you want ;) ).
