Baked Tilapia and Asparagus in Foil

Yes, I do cook savory dishes ;) and I do love to cook as a matter of fact, that's a huge part of what i do for a living and what I do almost every night (weekends included) We all have a go-to meal, something the entire family enjoys, easy and without much fuss. This dish is especially all that. I make it a point to eat fish at least three times a week... and tilapia is pretty democratic (kid-friendly so to speak) So here we go.....

Ingredients:

4 skinless tilapia fillets

1 pound asparagus, trim the tough ends

2 1/2 tbsp olive oil

2 garlic cloves, minced

salt and pepper to taste

1 lemon thinly sliced

fresh rosemary, chopped fresh thyme

Directions:

1. Preheat oven to 400 degrees Fahrenheit. Cut four sheets of aluminum foil about 14-inches long.

2. Divide asparagus into 4 equal portions and layer in center of each length of foil.

3. In a small bowl stir together oil with garlic, drizzle 1 tsp of the olive oil over portion of asparagus then sprinkle salt and pepper.

4. Rinse tilapia fillets and allow excess water to run off, then season bottom of each fillet with salt and pepper. place tilapia fillet in the middle of the foil, drizzle top of each fillet with 1 tsp of the olive oil mixture and season top with salt and pepper to taste.

5. Top each with rosemary and chopped thyme and a slice of lemon.

6. Wrap sides of the foil inward over the tilapia then fold in; top and bottom of the foil to enclose.

7. Place foil pouches in a single layer on a baking sheet. Bake in preheated oven until the

tilapia is cooked through, about 25-30 minutes. Unwrap and serve warm. Enjoy!! xoxo
